Curriculum Intent

At Nottingham Academy, our Hospitality and Catering curriculum empowers students with practical cooking skills, nutritional knowledge, and an understanding of the wider food industry. This subject not only opens doors to future careers in hospitality but also provides essential life skills that support independence, well-being, and healthy lifestyle choices.

The EDUQAS Level 1/2 Vocational Award allows students to explore both theory and hands-on experience. They learn to plan and prepare a range of dishes, apply safe working practices, and understand the structure and expectations of the hospitality sector. Lessons are engaging and purposeful, helping students develop confidence, creativity, time management, and resilience.

We follow a clear ‘plan, do, review’ approach, mirroring real industry practice. Students respond to live briefs, adapt recipes to meet dietary needs (such as vegetarian, Halal or allergy-aware options), and explore themes such as sustainability, cultural diversity, and food waste.

Throughout the course, students work independently and in teams, developing transferable skills such as problem-solving, research, and evaluation. Our curriculum celebrates the diversity of our school community by including global cuisines and food traditions.

Course Content Overview

  • Unit 1: The Hospitality and Catering Industry

Students explore how the sector operates, including job roles, types of service provision, health and safety, and food safety legislation. They apply their knowledge to real-world scenarios, proposing suitable hospitality solutions for different contexts.

  • Unit 2: Hospitality and Catering in Action

A practical unit where students plan, cook and present nutritious dishes based on a given brief. They also evaluate their work, demonstrating understanding of nutrition, dietary needs, sustainability, and safe working practices.

By the end of Key Stage 4, students are well-equipped with practical skills, industry insight, and the confidence to take their learning into further education, employment or everyday life.
